Popayán

Capital of Cauca, the colonial White City of Colombia. About 280,000 people. UNESCO Creative City of Gastronomy. Famous for whitewashed colonial architecture and a Holy Week procession dating back to 1556.

The Basics

1,738 m above sea level, mild (14–24 °C). Locals are payaneses. The historic center is almost entirely white — a colonial color code never abandoned.

History

Founded in 1537 by Sebastián de Belalcázar. Birthplace of more Colombian presidents than any other city — at least 17. A 1983 Maundy Thursday earthquake destroyed much of the historic center; rebuilding was meticulous.

Geography & Climate

Sits in the Pubenza Valley, with the Puracé volcano (4,650 m) to the east. Temperate, rainy, fog rolls down from the cordillera at dusk.

Sights

Parque Caldas, Catedral Basílica de Nuestra Señora de la Asunción, Iglesia de San Francisco, the Puente del Humilladero, and Museo Guillermo León Valencia. Holy Week processions are nightly Mon–Sat.

Food

Empanadas de pipián (with peanut-and-potato filling), tamal de pipián, carantanta, sancocho de gallina, and the famous salpicón payanés. Popayán hosts the National Gastronomic Congress every September.

Identity

Payaneses speak softly, politely, and value tradition. The Holy Week processions — recognized by UNESCO — define the city's rhythm. The accent is closer to Pasto than to Cali.
